Our promise

Nothing wasted.

Good things shouldn't go to waste — so at our place, they don't. We've built our making around a simple idea: what's left over from one craft becomes the start of another.

It works like this. Our leftover wine grapes don't get tossed — they're fermented on to create the base spirit for our gins. The botanicals from those gins are passed to local farmers to feed their livestock. And the scraps from our kitchen? They become compost that goes straight back into the vineyard, ready to grow next season's grapes.

Round and round it goes — wine to gin, gin to farm, kitchen to soil, soil to wine. A proper closed loop, shared between makers and neighbours, all powered by the Clare Valley that started it. Sustainable practice that actually tastes like something.
